Featured Recipe: Italian Stuffed Chicken Breasts
Ingredients:
- 4 boneless chicken breasts
- 1 cup of Italian-seasoned breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves of garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices of mozzarella cheese
- 2 tbsp olive oil
Instructions:
- Preheat oven to 375°F.
- In a large bowl, mix together breadcrumbs, parmesan cheese, parsley, garlic, salt, and pepper.
- Cut a pocket into each chicken breast, making sure not to cut all the way through.
- Fill each chicken breast with a slice of mozzarella cheese.
- Dip each chicken breast into the breadcrumb mixture, making sure it is fully coated.
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the chicken breasts to the skillet and cook for 2-3 minutes on each side until they are golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked.
