Sunrise Pancake Stack

Ingredients:

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract

For the Sunrise Toppings:

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1/2 cup fresh pineapple chunks
  • 1/2 cup whipped cream
  • Maple syrup, for drizzling
  • Optional: a sprinkle of powdered sugar for garnish

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.

  4. Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.

  5. Pour 1/4 cup of the pancake batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.

  6. As the pancakes cook, you can start assembling your Sunrise Pancake Stack. Place a pancake on a serving plate.

  7. Add a layer of sliced strawberries and blueberries on top of the first pancake.

  8. Place another pancake on top and add a layer of fresh pineapple chunks.

  9. Repeat the process, stacking pancakes and adding your favorite fruit layers until you've used all the pancakes.

  10. Top the pancake stack with a dollop of whipped cream and a drizzle of maple syrup.

  11. Optional: Dust the pancake stack with a sprinkle of powdered sugar for added sweetness and presentation.

  12. Serve your Sunrise Pancake Stack immediately while still warm. Enjoy!
