Sunrise Pancake Stack
Ingredients:
For the Pancakes:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
For the Sunrise Toppings:
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1/2 cup fresh pineapple chunks
- 1/2 cup whipped cream
- Maple syrup, for drizzling
- Optional: a sprinkle of powdered sugar for garnish
Instructions:
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
-
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
-
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
-
Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
-
Pour 1/4 cup of the pancake batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
-
As the pancakes cook, you can start assembling your Sunrise Pancake Stack. Place a pancake on a serving plate.
-
Add a layer of sliced strawberries and blueberries on top of the first pancake.
-
Place another pancake on top and add a layer of fresh pineapple chunks.
-
Repeat the process, stacking pancakes and adding your favorite fruit layers until you've used all the pancakes.
-
Top the pancake stack with a dollop of whipped cream and a drizzle of maple syrup.
-
Optional: Dust the pancake stack with a sprinkle of powdered sugar for added sweetness and presentation.
-
Serve your Sunrise Pancake Stack immediately while still warm. Enjoy!
This delightful and colorful Sunrise Pancake Stack is perfect for a cheerful and delicious breakfast.
